Before You Start: Update

Depending on your make and model of pellet grill, it’s entirely possible that there have been updates since last winter. If so, be sure to update those before you actually get to cooking. Just as you would prepare days in advance for a big holiday grilling session, download these updates as soon as you can. After all, you don’t want to wait (or worse) on the perfect grilling opportunity because the updates are taking their time. Get them done ahead of time and you’ll be in a better position for success.

Take it Apart and Put it Back Together

Keeping it in a storage facility, garage, shed, or something else can keep it safe, but before you eat something that you put in there, odds are you’re going to want to clean it as thoroughly as possible. So, when in doubt, take your grill as much apart as you feel comfortable doing, clean it, and put it back together. If you start to get a little antsy about taking it apart, that’s OK, just do what you feel like you can handle.

Of course, the cleaning process doesn’t stop just because you’ve disassembled, cleaned, and reassembled your grill. Luck O’ the Irish and Everyone Else: Grilling Pellets Corned Beef Advice

St. Patrick’s Day doesn’t have to just be about Guinness, green beer, and the like. Corned beef has been a tradition for many American families for St. Patrick’s Day for many years. Whether this is your first time cooking corned beef for St. Patrick’s Day or you’re the next in line to continue the family tradition, you can use your pellet grill as well as our grilling pellets to cook corned beef in a way that was impossible just a few years ago.

Corned Beef

We’ve found that many of the folks that dearly love corned beef aren’t aware of exactly what it is. Essentially, corned beef is salted brisket with pickling salts added, and put into a brine for 17 days. You make your brine, you take your barrel or your pot, add cold water and start adding salt, then put a raw egg or a potato in there. Once that egg or potato starts to float, the brine is perfect. That’s the right amount of salt for pickling. Next, you can start adding the pickling salts.

For Strong Corned “Beef”

Another rule of thumb: it’s about a pound of pickling salts per gallon of water. Use that as your baseline for a definition of a “strong” brisket. Thus, if you want a brisket that’s “very strong,” go beyond that, yet if you want one that’s less strong, use less. Additionally, just because the name is “corned beef,” that doesn’t mean you’re locked into making only “beef.” For example, in this video, you can see that we’ve corned tri-tip, too. Should you do this pickling, consider weight to keep your meat submerged from floating in the vat.

Why this is Preferable to Store-bought Corned Beef

We absolutely understand if you don’t have the time or capabilities to be able to pickle your own meat, etc. However, when you do so, you won’t have to deal with all of the preservatives that store-bought corned beef has. From sodium phosphate to many other kinds of preservatives that are too hard to type out, there are all kinds of preservatives that aren’t as good for you (to say the very least).

The Challenge When Smoking Corned Beef

If you just throw them in the smoker after pickling, they could be way, way too salty. That’s why we boil them. That way, we get some of that salt out of the brine. The length of boiling depends on the meat. For example, tri-tip may best be served for 90 minutes to two hours, whereas beef may have to be boiled for up to four hours or more.

Grilling Pellets: Good for Any Meat Any Time of the Year

What follows is one particular method we use for cooking beef after the above has been completed. After you get some moisture out of the meat, prep your grill at 275 degrees. Put the meat in the middle of the grill. Consider grilling it for a couple of hours. Then, foil it up (with some holes so steam can come out), add a little beer with it, and then put it back in at 195 degrees. The answer is: “by placing your Dutch Oven in the pellet grill.” Specifically, you’re going to do so early in the process, too, such as when your smoker preheats. This is one of those dishes that really shows off the versatility of what a pellet grill can do. Yes, it’ll simmer and cook for six hours (minimum), but when this dish is done, it’ll be oh-so-worth it.

Specifically, you’re going to want to trim any excess fat from the pork shoulder before you begin cooking. The short answer is: “A bit more than you think you’ll need.” The last thing you want is to run out of pellets while you’re cooking.

Salt and pepper are, for the best stakes, not “optional” but rather, mandatory. If you watch the video, once the stakes have been properly coated in salt and pepper, it’s time to get them on the grill at 555 degrees. Our pellets can help the cooking in a variety of ways, not the least of which is how they can help to start the cooking that much easier. As our pellets “really get to temp fast,” they can make the entire cooking experience that much faster and more manageable. While they do so quickly, they don’t sacrifice anything in terms of quality.

When it comes to cooking on a grill, far too many believe that “cooking” simply consists of “preparing the grill, preparing the food, putting it on the grill, and removing it when it’s done.” Sure, you can do that. But, to get the best meal out of these rib eyes, put them right over the sear plate. Then, as it flashes, flip them over. Once the flash returns, move them to the side. That’s real cooking – using all of the grills for the best cook. What’s the point of all that, you might ask? To seal the moisture in.

After the above has been done, it’s easier to cut the steak than ever. As you do so, of course, you’ll find that it’s simple to remove the fat you don’t want. Here’s one that happens more often than you think: at the end of summer, you put the grill in storage or even in your garage. Then, when the warm seasons arrive, you get your grill out and put it where it’s always been… only to find that the ground has changed. Maybe the roots of a tree have changed the ground or something similar – before you go to the trouble to get your grill out, be sure that it’s going to the right place.
