Put it Under Cover
A pellet grill isn’t the kind of thing that can be left out in the winter to fend for itself. Anything you can do to get it under a cover for the winter would be best. A garage, a storage facility, a basement, etc. If you can’t do any of that, even a shed or awning is something.

By that same token, nothing wrong with wrapping it up as well. Covering it in a tarp you can trust is one further step you can take to protect your grill from that which would harm it.

Disconnect for the Winter
This may sound obvious, but you would be amazed at how many folks forget to do this: disconnect your grill from the power lines. There’s nothing wrong with repeating that so that you get it in your head: disconnect your grill from power. Today’s pellet grills are, for the most part, technologically advanced machines. As such, there are many electronics and other forms of cutting-edge tech inside them. Leaving them connected to power is a good way to inadvertently fry them when you aren’t around.

Almond Smoked BBQ: Pork Shoulder with Knotty Wood Raw Honey

What You’ll Need:
5 lb pork shoulder
1/2 cup Knotty Wood Raw Honey
1/4 cup soy sauce
1/4 cup apple cider vinegar
1/2 cup of your secret recipe BBQ sauce
2 tbsp of brown sugar
1 tbsp each of paprika, onion powder, and garlic powder or 1 tbsp of Knotty Wood BBQ Rub
1 tsp of black pepper
Salt to taste

2 forks for shredding the meat
Directions:
1. Prepare the Pork Shoulder
Trim the excess fat from the pork shoulder. Leave a thin layer of fat. Rub the surface with black pepper, garlic powder, paprika, onion powder, and salt. Or you can replace the onion powder, garlic powder, and paprika with Knotty Wood BBQ rub.

2. Prepare the Smoker
Soak the Knotty Wood Almond BBQ Pellets in water for an hour. Then preheat the smoker so it retains a temperature of 225 degrees Fahrenheit. Add the soaked almond chips onto the wood chip tray.

3. Smoke the Meat
Place the pork shoulder over a drip pan inside the smoker. Shut the smoker lid and smoke the pork shoulder for 7 hours or until the meat’s inside temperature is 190 degrees Fahrenheit. Add water and soaked wood chips as required during the smoking phase. This will retain the temperature and level out the smoke. (Always keep the pellets in a cool and dry location.)

4. Add the Knotty Wood Raw Honey to the BBQ Sauce
During the smoking process, mix the Knotty Wood Raw Honey, the secret-mix BBQ sauce, the apple cider vinegar, soy sauce, and brown sugar in a saucepan. Allow the concoction to simmer over medium heat for 10 minutes or until it gets thick. Stir every now and then to prevent problems with sticking. After the sauce is the right consistency, set it aside.

5. Finish Cooking and Preparing the Pork
When the pork shoulder reaches the desired temperature internally, take it out of the smoker and set it aside for 30 minutes.

 

Next, gently shred the meat with two forks and get rid of any connective tissue or fat. Add in one-half of the honey BBQ sauce to the shredded meat. You may have to add more, depending on your flavor preference.

6. Serve the Pork Shoulder
Serve the meat to your family or guests and include the remaining honey BBQ sauce for dipping.

Choosing Between Baby Back Ribs and a St. Louis Style BBQ

When it comes to ribs, there are two options; baby back or St. Louis style. Baby back ribs come from the part of the rib cage below the spine. They tend to be more substantial  – containing more fat and are typically pricier.

St. Louis style ribs refer to spareribs that have been trimmed into a shape. While they do have bones, they also offer tastier meat. If you prefer fall-off-the-bone tenderness, opt for baby backs. However if you’re a carnivore, St. Louis style is the way to go.

Now that you’ve made your choice, it’s time to start smoking! Now, that doesn’t  mean you should buy a pack of Marlboros. You need to smoke those ribs to get the best results.

Some Key Ingredients
Also, an essential element is the rub. Create your blend of spices like paprika, chili powder, brown sugar, garlic and cumin. Apply the rub generously on both sides of the ribs. Let them marinate in the refrigerator overnight so that the flavors can infuse just right.

Fire Up the Smoker or Grill and Keep the Barbecue Pellet at Hand
When you’re ready to cook, fire up your smoker (preferably)  or grill using the best of the best woods for a smoky taste. The key is to maintain a slow cooking temperature; around 225 to 250°F (107 -121°C).

So, you need to practice patience. If you do, you’ll be rewarded with tender ribs where the meat effortlessly slides off the bone. Flip the ribs every 30 to 45 minutes when cooking. Baby backs usually take about 3 to 4 hours total cooking time while spare ribs can take up to 6 hours.

You’ll know that the ribs are done when the meat has pulled back from the bones – approximately one-half inch.

For a burst of flavor, give the rack a subtle spritz of apple juice or cider vinegar during the last 30 minutes of cooking. Afterward, allow the ribs to rest for 10 to 15 minutes before slicing and serving alongside with sides – sides like potato salad,  beans, coleslaw, corn, beans, or cornbread. The age-old question arises time after time. Should you sauce your ribs or leave them as they are? While some traditionalists argue that a perfect rack of ribs requires no sauce, some strongly disagree.

Creating your own homemade sauce is always a great option. While store-bought sauces may offer convenience, they often lack the flavor. Also, if you’re struggling to pronounce half the ingredients on the bottle, it’s probably best not to consume them.

Set Up Your Grill

The first thing to do is make sure that your grill is primed and ready for pizza making. Confirm that you have a thermostat and a working lid, and place two large bricks on either side of the grill to create a more focused spot for heat in the middle. Preheat the grill to between 550 and 600 degrees and give it at least 15 minutes to get to the ideal temperature.

Roll Your Dough

Place one 1 pound of pizza dough on a lightly floured surface and roll it outwards in a circle with a diameter of about 12 inches. Pick any toppings that you prefer, and make sure that you slice them all into consistent pieces with the same thickness. This ensures they are much more evenly cooked.
